Breakfast Stuffed Sweet Potato

Recently I have found myself on the search for new breakfast ideas. Especially ones low in carbs, because I can eat carbs all day long but I prefer to time them after my workouts around noon. However, when I do eat carb for breakfast they must be from a good source. Sweet potatoes are a fit girl’s best friend. Packed with vitamins, iron and fiber the sweetness they do contain is natural and won’t spike your blood sugar. Those are my kind of carbs.

Which brings me to these stuffed beauties.

My recipe is for one stuffed half, you can double the eggs and cheese if you want to stuff both halves. I saved the other half to stuff the next day.

Breakfast Stuffed Sweet Potatoes

What you’ll need:

1 sweet potato

1 egg and 1 egg white (3 tbsp of liquid egg whites)

2 slices of turkey bacon or 1 chicken sausage (or your choice of breakfast meat)

3 tbsp of Low fat cheese, I used sharp cheddar

Salt and pepper to taste (I use Pink Himalayan Salt)

What to do:

First, clean the sweet potato and poke it a few times with a fork. Wrap it in a moist towel (a moist paper towel works too) and microwave for 5 minutes. If you’re one of those people who don’t use microwaves you can bake your sweet potato at 400° for about 1 hour.

While that’s happening, cook your breakfast meat and scramble it with the eggs and seasoning.

Once the sweet potato has cooled enough to handle, slice it half lengthwise and scoop out about half of centers. Save what you scoop for my next recipe! Fill each potato with the eggs and meat, top with cheese. Microwave for 30-40 seconds to let the cheese melt, or place under the broiler. That’s it!
