I was running a little late today and lost track of time at Staples. I thought I wasn’t going to make it for my pick up time but thankfully my CSA host Sandy was nice enough to wait a few extra minutes for me.
This week included:
- Corn
- Cantaloupe
- Green Beans
- Yellow Peaches
- Pluots
- Mint
- Turnips
- Tomatoes
- Eggplant
- Zucchini
- Red Lettuce (not pictured)
I’m really excited for the eggplant. My husband is out of town for work for a couple of days so I might venture into making a spicy eggplant and tofu dish {he doesn’t ‘do’ tofu…. whatever!}. The girls are already munching away at the pluots and yellow peaches. I love corn, corn bread, corn chowder, anything with corn pretty much…. I’ll have to come up something for all the corn I’m collecting this week.
Sounds like a pretty busy week in the kitchen for me. Any ideas on what I can use the big bunch of mint for? I’m thinking of sticking it my chocolate smoothie and other than that all I can think of is using it for tea.
I have to wait until everyone is out of town to prepare eggplant but I do love it.
