
I love chicken lettuce wraps, most recipes I’ve found are a little time consuming for me most nights. I’ve simplified mine by using ground chicken.
1 lb. ground chicken
1 garlic clove, minced
1 tbsp grape-seed oil
1 cup sliced mushrooms
1 8oz can water chestnuts
1 8oz package of pine nuts
1 head of iceberg lettuce
Thai peanut sauce to taste
In a medium to large frying pan under medium heat combine oil with garlic and add ground chicken. Cook until no longer pink. Meanwhile, chop mushrooms into small pieces and drain water chestnuts. Add mushrooms,water chestnuts and pine nuts to pan, cook until mushrooms soften.
Wash and leaf lettuce, serve with Thai peanut sauce.
